Apologies for all the biscuit posts lately – the next one will be cake, I promise. But these were something I couldn’t pass up – I have a somewhat obsessive love of desserts made with green tea (started on a trip to Japan years ago where I pretty much ate nothing but sashimi, gyudon and green tea icecream). Our local tea shop didn’t have any matcha in stock, but did manage to scrounge a little test packet that had almost exactly 1 1/2 tbsp in it – perfect for this recipe (link below).
These shortbread are perfect if you don’t want something too sweet and are after something a little different. A word of warning though – like the author, I used a 1-inch cookie cutter, which resulted in biscuits so cute and small rather a lot of them found their way into my mouth. You have been warned.
